Tradition and art” are the two words which together best describe a cuisine which deserves to be remembered, which delights the senses and pampers the palate: Parmesan cuisine.
Amidst the sublimation of flavours which have been handed down generation to generation and age-old recipes, the place of honour goes to the pig. Here, amongst culatello, Felino salami, fiocchetto, Parma ham and cotechino, pork fat is finally reinstated as being synonymous of tasty and as the perfect partner for unsurpassable, hearty meals.

Superior salamis to be consumed together with the ever-present queen, pasta fritta (fried dough), the typical dish of farmyard merrymaking.

Soft and white, it falls on spinach ravioli like snow, Parmigiano-Reggiano cheese: all its goodness is released if eaten in pieces as an appetizer or is the absolute protagonist as a second course of undisputed quality.

The Chef of the Grand Hotel Terme Astro recommends:

Dinner with a great composer: Risotto Giuseppe Verdi style

Ingredients necessary for 4 people:
400 g of semi-fine Vialone Nano rice, 1 litre of meat broth, 1/2 glass of dry white wine, 40 g of butter, 40 g of ox marrow, 60 g of Parmigiano-Reggiano cheese (matured for 24 months), 30g of onions, 0,5 g of saffron pistils

Brown the onion and finely chopped marrow in 20 g of butter, add the rice and cook over a medium-high flame for 2/3 minutes stirring gently, then slowly pour in the white wine and evaporate.
At this point, add 3 ladles of boiling broth and stir gently, continuing to add the broth only in order for the rice not to dry out; about half way through cooking add the saffron pistils dissolved in a ladle of broth.
When the rice is slightly underdone and the consistency still appears wave-like (liquid), add 20 g of butter and the Parmigiano-Reggiano and thicken (stirring energetically) for a couple of seconds... allow to rest for a minute and Giuseppe Verdi is served!
